During set-up, I neglected to specify a default e-mail. How do I do it now?

During set-up I neglected to specify a default e-mail. The prompts said I could do that later. How do I do that?

    I suspect that it is because of this that my Meeting Invitation screen has no FROM line and no SEND button.
