It is really annoying to have to sign in every time we need to use the iOS app. It'd be nice if it would keep signed in.

Good news, this issue has been fixed.
The Keep me signed in option in the iOS app now works as expected.
When enabled, your credentials are remembered and you stay signed in, even after closing the app.
