Remote screen garbled and unreadable when I connect...

Trying to connect into an ubuntu system with no X Server installed.  It's just a basic Linux physical server with CLI only.  I can connect, login and execute commands but unfortunately can't read any of the text.  It's all garbled and unreadable...  The Screen resolution icon is also greyed out so can't try any other resolutions.  Any ideas?
