Multiple Remote Sessions in a Single Window
Every time I connect to a remote machine, the new session pops up in a separate window. Is it possible to stack the multiple sessions in a single window (like RDC Manager does) so it's easier to swap between them? (sorry for such a bone question - I'm a new TV user!)

great question!!
I recommend testing to activate the Open new connections in tabs in your TeamViewer options under Extras --> Options --> Remote Control:
Activating the setting results in new sessions opening in a new tab instead of a new window!

When are TeamViewer going to fix this for those of us using macOS?
Every time I open a new session it insists on opening up in an already running session, as a tab, messing with the position and zoom/settings of the original session.
Please allow us to not have new sessions open as a tab in an existing session, like you do for the Windows users.

Well, that's another 12 months gone by and not only have TeamViewer not added this fairly basic functionality into their macOS version of the product but there isn't even a response to this thread, to acknowledge it!

in MAC OS go to SYSTEM PREFERENCE - GENERAL - PREFER TABS and set ALWAYS
