Hi, I've got a customer and I'm trying to add a user to the allowed list but all of the options are greyed out.
How do I get access to add someone to the allowed list?

If the options are greyed out I guess that you and your customer do not have admin rights on that computer and that there is a policy running on the device. E.g.
The admin of the device has to make the changes or assign the device to you to be able to manage it.

Something to try...I would suggest removing the account assignment. Then I will guess you have the option to modify the allow/block list again. Then you can re-add the assignment again.
