I've more or less successfully navigated how to set up custom host and full installs on Windows for our Org, but now I am tackling macOS installs and the documentation doesn't provide any insight at all on why the XML is needed, what it does, what the actual point of -showChoicesAfterApplyingChangesXML or -applyChoiceChangesXML are, or how they might be edited (if they can). Can someone shed some light on this? Are they useless in the face of what little is available via the assignment IDs?
