For some reason my partner has a dash for their one time password and for some reason when they press refresh to refresh the password nothing is generated and it's kept as a dash. How do we fix this?

After enabling the One-Time Access feature in the TeamViewer settings, you then need to activate the One-Time Password, instead of clicking on refresh arrow, as shown below:
