i make a lot of connections to customers. i use my phone to speak with them so DO NOT want teamviewer automatically turning MY microphone on
how can i make sure this is not happening. the only setting i can see is here

You always have to unmute your microphone of all calls via TeamViewer manually.
Like the camera, your microphone will only start after you enabled it. This is a security setting.
