If I am using teamviewer and I am interacting with a person and someone has my ID and Password can they snoop without me knowing? How do I know only me and the person I'm dealing with are the only two using teamviewer?

Yes, someone who has your ID and password can log into your computer.
However, if someone is connected to you, it will always appear in this box (at the bottom on the right-hand side of your screen):
