I'm using the current Teamviewer app on Mac with an up to date OS. I can enter my email and password in the log in panel, but the Sign In button remains greyed out.
Has anyone else experienced this, and is there a fix?

Is your TeamViewer set up to run in LAN? You can check it here: Extras --> Options --> General --> Incoming LAN Connections
With the LAN only mode, your TeamViewer only works in your local network and is not connected to the Internet. Therefore, connecting to his TeamViewer account is impossible.
Also - is it possible that your TeamViewer can´t access the internet for any other reason?
