Our company supports machinery that still runs Windows XP. I know I can create a teamviewer quick support under "Design & Deploy" for version 15. Is there a way to create this quick support in "Design & Deploy" for version 11?

This is not possible, as your whole Management Console has been converted to v15,
However, you can get the QuickSupport in version 11 here: QuickSupport v11
