Is it ACTUALLY possible to get rid of this window that I have no use for?
I have attempted to do this via all teh previoius isntructions but the check boxes needing clearing are all greyed out.

You can disable that in the TeamViewer Management Console in your profile settings:
Your profile --> Edit profile --> uncheck the box Show comment window after each session
