What are the steps to set up remote control from iphone to iphone

Hi! I need to remote in from my iphone16 or macbook to my mom's iphone16 to help her change some settings. We are not on the same wifi network. She's blind, leaves in France, I'm in the US. How do I set it up remotely, and can I set it up remotely? Thanks.

Please know that due to Apple's restrictions, only screen sharing is currently possible.
