When sharing the screen, are there any other options other than sharing the whole screen?

Currently, there are no plans to add more options for screen sharing.
You can go to Blizz options and unclick "use new interface" checkbox. Then a meeting UI will be similar to a TeamViewer meeting UI and there will be a couple of additional options for screen sharing. But still, it is not possible to choose some random part of a screen. Please be informed that this is older UI and it is not supported, so there may be issues with it.

If I remember correctly TeamViewer does allow for that level of granular sharing, right? (if you know off the top of your head I realize it's a different application alltogether).

So just to clarify - those are the only two options right - whole screen, or application.
I can't choose say a piece of my screen, or a tab within my browser.

It is possible to share a particular application. Start a meeting, click on "monitor" icon (near a chat icon at bottom of a screen), there you can select an application you want to share.
