We are using the latest version of Server 2016, with TeamViewer 15.4.8332, and when we click on Options it results in the TeamViewer application crashing.

This might be a bug related to this specific version.
As we have published version 15.5.6, could you please update your clients and see if the crashing is still happening?

Yes, 15.5.6 seems to have fixed the issue. We actually had a second server with the same issue, but that too has been resolved with v15.5.6.
