When you connect via TeamViewer (via remote control session, via not Meeting), the remote computer shares is being shared.
In the local side (you), you can define which screen you want to see within the remote control session by clicking the monitor button:
Did I get you right? If not, could you please explain more what you mean?

Unfortunately, it is not possible to deactivate or hide monitors.
If you want the guest having access to only one of your screen, you need to connect while having only one screen (plug the other monitors out).

Sad, because in TeamViewer 12, when you had Quick Connect, you could even share a program exclusively. But thanks.
